However, your case is a bit different as you are a full-time student.  Depending upon privacy policies at your school, a provider may be able to verify this in much the same way she would check on your employment.  

My advice to you is to post on your local Regional Board and/or the ISO board.  
Say just what you did here: you're looking for a newbie-friendly provider who would be able to screen you without requiring employer info, since you don't have that to offer her.

surprised no one else mentioned P411.  Gina and her staff will work with you to get you verified.  P411 also lets their providers indicate if they are newbie friendly

As far as another hobby is concerned, I don't know of any that will provide you with a very happy ending like this one.  The decision is yours.
