As someone who's slipped away from work more than once for some fun, a few pointers on that front:

Come up with a good excuse to be out (unless your C-suite and don't need to have an excuse). Otherwise, a favorite of mine is "friend/family/acquaintance visiting NY for first time so I'm taking them to lunch". This works for several reasons:

It explains an extended (over 1 hour) absence from work.  
If you plan on dressing a bit fancier than usual, this also won't raise suspicions.
If you plan on an incall/outcall near work, if people who work with you see you going into a hotel, you can easily explain your meeting the person at their hotel.
If for some reason you and the lady end up going into/leaving the hotel together, you can explain being seen with another person.

Outside of that, just don't make a huge deal out of it and act normal. No reason for anyone to suspect.
