Many girls permit things like CIM depending on how well they click with a person.  And you are correct that you should not ask the provider this directly before you see her or you'll be shut out.  But you can go back channel and ask the guys who've reviewed her.  Profile info, especially, can be dated as well.  It's all about doing your homework right.
In my experience, most girls who allow CIM spit, but don't swallow.
I can also say with authority that LunaNYC swallows.  With gusto!

I do all of the above. I just can't be robotic about my dates and frankly, some people brag about how many bareback sessions they've had in the last week and I'm just grossed out by that.

Days before a session, don't eat dairy. Try to eat lots of fruits, veggies and plenty of water. I mean, geeze, if you are going to be lucky enough to get CIM, at least appreciate that you should do your part to make your goo taste good.  

It's just one of the many considerate things a guy should do to show appreciation to a gal for giving so much to us guys.

So obviously some providers only do CIM on a YMMV basis and whether to spit or swallow is a personal choice based on preferences.  Some of the most cutting edge HIV research to come out lately reminds us, "spit or swallow, don't let it wallow!"  Meaning, although it is virtually impossible to get HIV from any kind of oral sex, the one way in which CIM can theoretically present a risk is if there are small cuts or sores in the mouth present that someone's (infected) jizz comes in contact with.  NOT brushing your teeth within an hour of a session will dramatically decrease the chances of these micro-cuts being present in your gums.  Since I think you can never truly know for certain whether someone is HIV-, the option that feels safest to me is to assume that everyone could potentially be HIV+ and not even know it, and to practice good safety methods always, accordingly.  In my opinion, swallowing is much safer than spitting.  If ejaculate spurts into the back of the mouth near the throat and is swallowed directly, it goes down the throat and hits the powerful stomach acid which will kill any viruses present upon contact, immediately.  No risk situation.  Spitting requires sending cum back through the mouth to contact the gums again, which is actually a higher site of risk, particularly if you've brushed your teeth within the last hour.  And waiting to walk over to the bathroom sink to spit is riskiest of all since it gives the jizz the most time to wallow in your mouth and find any cuts that might be present which you could be unaware of.
