My question is this: are there any non-FS providers in NYC who do such a performance?

Clearly there is no cover used, nor am I interested in FS bareback service at all. Just the equivalent of a grind or dry hump to completion, with some ass-to-shaft contact.

That's not too extreme. I think if you find a provider that you like and she does greek she will probably do this instead of full on greek. Just ask. The worst that can happen is the provider says no.
