I ate there a good number of years ago and wasn't very impressed.  It's not actually run by students but by a separate vendor. Or at least it was when I was there.

If you eat in the Escoffier Room the kitchen is staffed by students and you can see them through the glass wall.  But now they have other kitchens and I don't know if they're also staffed by students.  I ate in the Italian building about seven years ago.

If you want a provider then you are gonna have to import one from outside the area. Rhinebeck is not far from FISHKILL where we have some providers.
