at times i was amused and at times cringing reading this post.  i think the lesson learned is to know where to shop for what you want to eat.  i recently went to a place that had what appeared to be hundreds of items on the menu.  no way this could be fresh...so i ordered two eggs over easy.  i enjoy a good steak every now and then...so i go to a butcher and buy a dry aged ribeye.  grilled to perfection...pink and juicy on the inside....same with seafood...i go to a reputable fish monger...when i feel like going asian....i'm willing to pay a premium to get high quality.  the same should apply here.  if you go high volume you are rolling the dice....if you go with low volume...high end and it smells like weeks old sushi..that is not right..and unlike a restaurant...you can't just put some sauce on top!  bon appetit!
