Doing the same thing over and over and expecting a different result.  
Run, don't walk away from this one.

and only once due to illness or an emergency. If she's cancelled on you for eight times, maybe you're just not her favorite client. You should find a new girl - it is New York after all.

I would but what I don't get is why make the appointment in the first place?

Because she has nothing booked at the time. Then she comes down with a bad case of  better offer.  
There are so many other terrific, honest, reliable girls out there. Stop banging your head against the wall.

Maybe she is crazy. Who the hell knows. Just stay away.

This we girls also have to deal with cancellations. My last two trips to Boston I had the same client cancel on me each time so at this point since he never offered a proper explanation I just don't book with him.
