Bitcoins are a fantastic method of payment for hobbyists and providers. I know several providers who currently take them, and am helping some others get started with them.
Bitcoins are at least as anonymous as cash. Any "paper trail" that is generated by Bitcoin is easily wipeout-able, and certainly becomes wiped out once they are re-circulated.
Are they volatile? At present, Yes. For the most part, that volatility has always had an upward bias, though. A year ago at this time, you could buy a Bitcoin for around $8. Currently, Bitcoins are valued at around $700 each.
Everybody with any money at all should diversify some of their assets into Bitcoin (same as diversifying into stocks, real estate, commodities, etc).
Even for providers who don't want to get involved in holding Bitcoin long-term, it's a good idea to accept them as donations. Nobody has to walk around with large amounts of cash (especially good for providers who travel a lot) and the charges are irreversible (unlike PayPal, credit cards, etc).
Any provider probably has at least one techie-oriented client who can help out on quickly converting Bitcoins to US $ (I know any provider who sees me has at least one techie-oriented client who can help out with that kind of stuff  .
