Like previously stated, if you specified cuisine types, that would narrow it down a lot but some of my faves on the UES are:

Morso - great Italian and they have a rabbit ragu, that is Amazzzzzing
Arlington Club* (JackinNYC was on the ball with this one)  
Masa - super yummy Sushi, try the Wagyu beef with truffles
Fig & Olive or Amali - incredible Mediterranean

What sort of cuisine would you most prefer? Or perhaps more importantly, what type of atmosphere is your favorite? Would be a pleasure to recommend some suitable places. ;)

The Arlington Club, The Parlor and Cafe D'Alsace. Again, as it's been stated, it depends on what you're looking for in atmosphere and type of cuisine. I could just as easy recommend Yuka, a good dive all you can eat sushi join.
