Question please

Ok- I usually ask for seafood recommendations when on the east coast. Since the nearest ocean is, well, far- can you ladies tell me what are New Mexico 'must haves"? Recommendations on things I shouldn't miss out on to complete my New Mexico experience? Food, lodging, fun, shopping, sightseeing?

Suggestions would be GREAT!
