NM is a good place to come to. There is a good amount of hiking and such in close proximity to ABQ and SF. Riding the tram up to Sandia Crest is also worth the time in my opinion. Or, come during the balloon fiesta which is probably the main big even that NM hosts every year. Otherwise there's a bunch of historical/cultural stuff around that I'm no expert on.
You'll be better off going to Tucson if you want to hunt Gila's...
Depends where in NM you are. There is a lot to see and do there, most involving the outdoors as was mentioned.
What types of activities are of interest? Basing your trip out of Albuquerque, Santa Fe, Taos, Las Cruces? Car makes things much easier.
General categories are natural scenery: Rio Grande gorge, hiking the Sandia crest, el Mal Pais, Ruidoso, White Sands. Cultural: Chaco, Santa Fe plaza, Acoma, Salt Missions, Mesilla, Los Alamos. Arts: Taos, Ghost Ranch, silver working, pottery, Indian Cultural Center. Depending upon the time of the year the Balloon Fiesta, Bosque del Apache migratory birds, Sevietta, horse racing, chili roasting.
