Your example sounds like a real good start! It sounds like you understand that the key to having a good time is to make sure that both of you are comfortable, and with that comes allowing each other their space when you do need it. It's always tough on the inside, when you are going to spend a couple of days with a person, that you don't know that well, or in some cases, don't know at all. It's easier to be the "nice escort" for a couple of hours -vs- a couple of days. But, given a little space at times, I believe it can turn out to be the best time for both of you.
As far as compensation - I've noticed it always differs from escort to escort. $1,000/day might be a low end, and I've seen them advertise up to $10,000/day. To narrow that down a bit, I've noticed that most escorts were bewteen $1200 - $2200/day. What you have to keep in mind is that just because you two are on vacation, it doesn't mean it's not "business" for her, so do be prepared to pay a daily rate. Most girls wouldn't be into crusing the streets looking for clients to fill in the money gap that you may not have compensated her for.
Tips - with all that you are providing for (her time, hotel, food, flight, other activities, etc.,), I don't think many ladies would expect a tip. A nice gift that she can pick out somewhere is always nice. But, if you are the generous type, any amount of tip would be appreciated, I am sure.
