Here's a trip you may like.Take I-35 north to hiway 210 then head east through Jay Cooke State Park.It is one beautiful ride with hiking trails.The swinging bridge may be done by now.It was washed out this spring due to flooding.

I've been living in the desert, and have missed green lush trees and forests so much. I cant wait to go hiking. Thanks for all the suggestions last week on parks and sights to see. You were right, minnesota is beautiful! So happy to be in Minnesota where I'll be hugging both the trees and the men ;-)

A drive up the North Shore (hwy 61 from Duluth to Canada) is the best in the state.  

A drive along the Mississippi from Hastings to La Crosse would be a close second.

If you like a wilderness experience, then plan a trip into the BWCA.  

Lake Itasca in Itasca State Park near Bemidji is the headwaters of the Mississippi River.  Also a wonderful place to see.    

Also the St. Croix River is very scenic.
