Where a good place to stay is...hotels are hotels to me. Some are better than others but the better ones are usually out of my price range.  
If you're into art we have the MIA and the Walker are center. We have amazing food options everywhere. Do you have an area you are planning on staying in?
The best places for fishing ( imho ) are going to be up  north, like the Nisswa and Brainard area.

I've never been to Minneapolis and am planning a trip for next month to visit. I've found in the past it's always good to ask the board (guys and gals) where the best areas to stay are as well as unique memorable things to do and/or see.  
So if you have any suggestions I would GREATLY appreciate it! You can Pm me or respond to post. I am visiting Chicago at the moment so I'm closer to Minnesota than I thought. I do have my fishing rod and tackle box with me so I know you guys must have some great fishing there (at least I hope so lol) and instead of me trying to guess where to go ...I think it's best I ask the fishing experts there! Please come to Mille Lacs (Indian casino).  Large lake, fishing launches, guides, the whole nine yards.  If you like getting your thighs wet I could take you river fishing for smallmouth bass.  About 80 miles north of Minneapolis.  I live so far away from the cities I never get to play but I would do anything I can to get verified.

...so many good places to fish all around the state it's hard to pick just one but if you follow the advice of the gents who've already responded, you'll have a great experience. Start at Mille Lacs Lake and the Brainerd / Bemidji Lakes area. Pelican Lake is great, too and there are over 11,000 lakes to choose from. If you have the funds, you can rent proper boating equipment and hire fishing guides to ensure a successful catch. There are few things more sexy than a bikini clad hottie baiting her own hook and reeling in her catch!

In Minneapolis, I recommend staying downtown on or near Nicollet Mall and the Arts district. There's so much going on there during the weekday with street vendors and sidewalk musicians that it's just an interesting place to hang out in your free time
