What really is the big deal about waiting till you are 21 to participate in the sex industry?
Like it or not, 18 is the age when someone becomes an adult legally. You may think this argument is weak but reality disagrees with you; it is 18 whether you or I like it or not. Many people age 18-20 (and some even younger) are mature enough to make adult decisions. Many people 21 and older (and some a lot older) are not mature enough. It would be great if we had a way of evaluating a person's level of maturity in an unbiased way so that a person became a legal adult when they demonstrated they were up to it but we don't have any such thing; we go by age and with a few exceptions (such as significant mental handicaps) it is 18. Your position is that people 18-20 should not work in the sex industry. Fine. But the decision whether or not to work in the sex industry should belong to the adult making the decision.

And believe it or not that 3 years does make a considerable difference in regards to intelligence, common sense and maturity
As you mentioned, at 18 a person is able to do legally do all sorts of adult things. And while I do agree that in general there is a significant difference in maturity between 18 and 21, the legal drinking age being 21 while most everything else is 18 is not defensible in my opinion. If we as a society truly believe that 21 is an appropriate age at which people are mature enough to drink alcohol then that same logic should apply to such things as voting, joining the military, etc. For that matter, I have read that research shows the average human brain isn't mature until the mid-20s so maybe we should raise the age of adulthood to 25. In any event, I believe we should be consistent in how we determine someone is an adult. Right now, for better or worse, that is when they turn 18.
Backpage fosters a troubling environment in regards to trafficking .. and if there were guidelines in place that were implemented it would deter that environment.
There is no reason to believe this is true. Trafficking has been a problem long before Backpage or its predecessor in this area of escort advertising, Craigslist, became widely used. If Backpage stopped running such ads tomorrow, it would simply move somewhere else. And Backpage is quite willing to cooperate with LE in situations where trafficking is suspected.
