While I am still new to this hobby, and not sure if there is a technical definition, I'll share my experience.... of the three person encounters I have been privy to, with myself and two ladies, both adventures were labeled "double" by the providers themselves, and both "doubles" had the ladies licking the ladies. So nice! Hope this helps.
I define a 3-some as 2 ladies & me. I've only had this kind of date with Pepsi & Jenny & with Sera & Yoco. Both times the ladies did like each other, but concentrated most of their attention on me. Both of these combinations were 10's
I am not aware of a distinction between these terms other than what the proclivity and understandings are of the parties involved. Doubles with bi women have always involved bi activity by the women I have enjoyed. This is especially the case when you rely on the provider to recommend the third and is "really into" it as reviewed on TER. It's great entertainment when you are recovering, ahem, between cups.
If you want to be the exclusive focus (which I think will deny you dinner AND a show, as it were) you can always make that request. It's your "nickel" and, in my experience, the best providers will focus on your desires. And (again, from first hand experience) for the effort, time and resources, it pays to do this with only the best.

A doouble means you are seeing two ladies instead of one. Those two ladies plus you equals a threesome!
Now whether both ladies only entertain you, or whether they play with each other is between you and them, and whether the ladies are truly bi or not, but that doesn't change the description between doubles and threesome!

I have 2 ATF, A & B, and got them to agree to a double session. But at the last minute it fell thru becuz B's agency vetoed, and offered her roommate (R) instead. Just last week I tried to see B but she was not available, and settled for R. I mentioned double. She said fine, but all the girls in her group would do double without girl-girl action. Later, out of curiosity, I emailed another ATF, C, and asked her understanding of double. She said, right, she would do it with no lesbian actions. I said A is really bi and would not mind to do it to her. She said, heck no, you find someone else. She challenged me to look at the most famous Brooke's Vegas site which listed her as non-Bi (see below). So far, of the 4, only A is willing to go bi -- 25%.
They are fine with a threesome where both ladies only interact with him, and not with each other. For most of the rest of us, we want the ladies to do each other too! The key in your research is to find ladies who are "really bi." Rather than trying to create your own threesome, you are probably better off picking women who have already worked with each other, or at least know each other. Search the review data base. If you type "and" in the name spot, all the doubles will come up. (However, you will also get all the "sandys, amandas, candys, cassandras, etc.) You should also select "yes-really bi" for "two girl action."
If you are set on your atf "provider a" to be one of the ladies, and she does not already have a doubles partner, then the two of you should select the 2nd girl together, and your atf should probably communicate with her a little before the three of you get together.
If you want the ladies to fully interact with each other you need to (1) carefully read the reviews to determine whether they do (I've read wherein the ladies are described as "really bi" but in the details of the session there was never so much as a dfk between them); or if that is inconclusive (2) ask the lady politely but clearly once you've gotten through her screening and she's indicated she's comfortable having such a discussion. As a devout worshiper of girl-girl lovin' I simply won' book the appointment unless I feel sure that will be part of the 3some.
