Your best defense is to not give any overt sign that you are trading sex for money.
To that end, have the envelope placed on a counter (most outcall agencies give you specific instructions on where to place it).
She should be attempting to verify you, usually just showing a driver's license (Put you thumb over the SSN!)
From there just keep your Spidey senses sharp and if things don't look or feel right, head for the door and hope you make it.

Your post inquired about “Outcall.” This usually means the provider is meeting you somewhere besides his/her normal “Incall” location. What Outcall actually means is subject to the situation. If you meet at a location you suggest, then it is definitely outcall for the provider. If you meet at somewhere the provider suggests, then it could be the normal Incall place or location of choice for the provider.
Incall and Outcall each have their benefits and drawbacks from the L.E. perspective. L.E. can use an Incall location to have everything prepared to get you. This means they might have the location wired for sound, video, and a place nearby for them to spring from to nab you. This makes Incall perfect for them. That is why they like to use street walkers. They can wire her for sound and pop out of parked cars or buildings to get you. It is easier for them to get you from the street or a preset location.
If you truly pick an outcall location for the provider, L.E. has to find a way to get the evidence they need to nab you. This means a wire, or tape recorder on the fake provider. L.E. usually uses a fake provider, unless a real provider is cooperating with them, (which probably happens but is something I want to believe is a rare occurrence.)
If it is a lady L.E. or fake provider, they will want to ensure her safety at an outcall location. This means they have to be nearby to come to his/her rescue if needed. This means communications of some sort with the fake provider, by radio, panic button, or sign, (like opening/closing a window shade, turning a light on/off, etc…)
Plus, there are just some things a lady cop will not do to simply to arrest a John. They will not get naked, touch your Johnson, or let you touch them in their privates. These things can get their case against you tossed out in court; plus these things could hurt their careers and standings with most of the other L.E. people and the public. There are just some things L.E. will not do to make the simple arrest of a customer.
Therefore, in summary, I believe outcall is safer than incall for the customer. I also believe if you are in doubt, never discuss money for sex. A discussion about the exchange is all they need to get you. If you can get the provider naked or get her to grab your package, you are probably 98% safe, but nothing is ever 100%.
