Las Vegas
There are so many great steak houses on the strip and in Las Vegas.
My favourite is just off the strip on West Sahara Avenue.
Golden Steer.
Its the oldest steakhouse in Las Vegas. Opened in 1958.
Not only is the food great, but the place is a living history of Vegas past.
Some of America's and Las Vegas's most famous legends had their own tables here such as Elvis, The Rat Pack, John Wayne, Marilyn Monroe and Joe Dimaggio, just to name a handful.
There are also a few infamous people who had their own tables here, and even one who had his own room. Antony Spilotro, the mobs enforcer in Vegas in the 1970's and 80's.
Our waiter, Fabian Ong who has been at the Golden Steer 37 years served him just three days before he and his brother were beaten to death by the mob and buried in a big hole.
If you want to be surrounded by Las Vegas history as you eat your delicious steak, this is the best restaurant in Vegas to do it. IMO.

If I want a steak late night that is pretty good I might go to the Peppermill next door to Rivera Hotel on the strip great food and drinks not pricey.
Those are just a few of my favorites.

from person to person at the same restaurant.
I have been to most SteakHouses mentioned. On different days. In different years and during different times ( like busy CES times or slower summer times )
Almost every restaurant I could rate at times (from a scale of 1-5) as a 5 ,while other times as a 1.
How is that possible ??
One reason of course is each persons personal taste and preference. .......and other personal
experiences they compare it too.
For an example - I don't like my steak rare. I usually ask for medium rare... But every time I went to Delmonico's the steak was always too rare , even when I asked for medium.
and I wasn't the only one with that problem.
So maybe if someone loves rare , they go to Delmonico's and for them it is the best steak ever.
Now because I never enjoyed my dining there , I haven't been there in years ........ so maybe things have changed .
Keep in mind , food is prepared by Chefs and the sous chefs ........ and they don't keep their jobs in one place forever 
So years , maybe months , or even weeks later ........ because of a different Chef or sous chef
the steaks are prepared differently.
What is one opinion compared too ?
I will admit , I may be a bit spoiled because I have had Kobe Beef in Japan.......nothing can ever compare to that
Also eating steaks in some of the most amazing places around the world ......tough act to follow.
Now lets say someone only had steaks at Outback Steak house ........although I think they are not bad at all , I mean it is a chain restaurant .
Then someone goes to a high end steak house in Vegas ...................and they are just blown away.
That happened to me at Wynn SW....... now remember I have had awesome steaks in my life.
It was my first time there . I was with a couple who are well known regulars to the restaurant.
I was blown away by the food , by the service ....... didn't even care about the atmosphere.
I thought finally a restaurant that is truly amazing ..... up to that point The Steakhouse at circus circus was one of my favorites.
A few weeks later I am excited to recommend SW to my dinner date and I just go on and on about it ........ boy was I embarrassed . It was one of the worst experiences ever !!!
So how is that possible ?? well a few reasons .......first off , if you are known or a high roller you will be served the best of the best.
Also It can depend what day of the week you go to the restaurant.
Vegas doesn't raise cattle , meat is brought in not on a daily base........meat will taste different if coming straight off shipment or been standing in the kitchen/freezer for a few days
Is the restaurant super busy , or not ?
Did chef ,sous chef or staff call in last minute sick ..... so now the restaurant is short on staff.
Was it even the same chef as the last time you were there ??
A restaurant runs out of certain cuts and get replacement cuts from other places that can't live up
to their reputation..........Yes that really happens .
There are really many reasons why experiences can be different.
While a restaurant should strive to keep their reputation and quality according to it's name.
In reality running a restaurant isn't an easy task.
While the restaurant may be trying it's best , it is just not possible........because so many factors are involved....... and at the end of the day they still need to make a profit

2) other fine steak houses include Gallaghers in NYNY (only reason to set foot in that place LOL) & Prime
3) Craftsteak at MGM .. been there three times in last 5 years - had to send food back everytime -avoid
4) Carnevino in Palazzo - only been there once was fabulous
5) Maestros - its part of a chain but safe choice - can be erratic quality - but great when its on point
6) Cut - in Palazzo ......if i had to take to impress this would be first choice
7) Prime - i think they havent slipped as much as gotten complecent ..but still a nice meal
8) the steak in my hotel suite - the finest prime meat in vegas
I knew i had gotten old when i realized i set up my meals for my vegas trips before i finalize which girl i was going to see LOL
