I like Hamada located right off the strip Flamingo/Paradise,Sushi Samba in Palazzo Hotel on the strip.
Hachi at Red Rock Casino this is some ways away from the strip.
One more would be Koi at the Planet Hollywood.

Osaka ( link below) voted #1 a few years in a row. (not in a casino, worth the drive!)
As for the hotels that have good Sushi -MANY to choose from! some of my favorites :
Aria > BarMasa
Hard Rock >  Nobu
MGM  Shibuya
Hamada of Japan voted top as well. - Rio and Flamingo hotels

This is my favorite casual sushi place.  All you can eat is only $29.95 per person and includes ANYTHING on the menu.
