Rent a boat and spend the day.

I did it once many years ago butnit was January and too cold. You touch down for lunch. If it had been warmer it would have been perfect.

Or what about a few of the fine art galleries on the strip. I very much enjoy art

How about going to a spa? A lot of the spas here such as Mandalay Bay spa offer a low entrance fee to use their steam room and sauna and hot tub and such or massages! I know you said no pool but that's a little different than a pool day. It's sexy and steamy  

As far as fun goes they have go kart racing near the palms hotel that is fun. Or something romantic and calm are the gondola rides in the Venetian.

Lake las vegas - flyboard rentals or boat rentals...

try renting this motor bikes for fun running up and down and around the strip
