All the following had wide varieties of meats, etc. but I cannot comment on those - my notes mention fish, Sashimi, and dessert choices as those are the important things to me!
Rio - Carnival World buffet -I think this was the first buffet, at least the first one worth mentioning. Good variety -Many fish choices!. Sushi yes - boring dessert selection -IMO, I prefer the sugar free desserts, they only had two choices for sugar free
Bellagio - Great variety -Big selection of sugar free deserts YUM! Decent choices of fish, and Sushi and Sashimi yummy !
Wynn -My favorite part of this buffet is their Great selection of desserts! all on little plates - they didn't have as many fish choices = Yes on yummy Sushi and Sashimi .
Caesars, only there once, and it was good, big selections , but, IMO Over priced! Unless they have lowered the price, I wouldn't go back ( was like 55 ) sat in line 2 hours -
For more local opinions, and tourist opinions, like ShillBill mentioned, good info on Google, and as mentioned, Yelp too! ( also on Yelp, the ones to avoid!)
Most the buffets have a hand sanitizer dispenser at the entrance. All the ones I mentioned are clean and well kept. I always look for the GRADE A health inspection, which is to be posted in clear view for all patrons to see

edited to mention, when in the buffet line , if you see someone in line sneezing or using their fingers to 'sample', you can ask for a new set of tongs - or skip that part of the buffet !
Some buffets are using individual plates so no tongs needed, i like this idea! Much more sanitary!
