We have a wonderful steakhouse in Tampa that has some of the most memorable steaks I've ever had. It will be interesting to see if any of the Vegas ones can come close! :)  
   
 Incidentally, does anyone know if any of the ones listed are grass-fed?
For some really amazing food and also grass-fed beef as you are looking for, try Bouchon in the Venetian. It's Thomas Keller'
s place, a chef known for sourcing his stuff from growers he visits personally and who even grow stuff to his specifications. He's the owner of the famous French Laundry in Napa Valley :)

Prime at the Bellagio is excellent, and very close for you...lol.

My favourite is the Golden Steer on 308 West Sahara AV.

Its the oldest steakhouse in Vegas. Opened in 1958.
Tons of history, with almost every Las Vegas legend eating here at some time or another.

My steak and chips were as good as I have ever had.

I knew you were going to have to chime on this UK. I totally agree. I dropped $600 there the last time I was there and it was worth every penny

SW Steakhouse is great! I go there whenever I visit Vegas with friends. They have a separate menu for vegetarians and I love it! ALL of my friends order steaks and swear by it being one of the very best in Sin City! I also enjoy there A+ service, never disappoints. Advance reservations highly recommended ;)

I recently enjoyed a steak at the Voodoo steakhouse at the Rio it was very good and has amazing views of vegas since it is on the 50th something floor.lol
Edited to add Vic & Anthony'steak house downtown in the Golden Nugget very good as well.

Been to several of the steakhouses in LV Weekly recommendations. Best steak to me is at Envy in the Renissance Hotel on Paradise. Atmosphere may not be better than others but for shear taste of steak, it's the best.

and prefer the "old school" feel with both my steaks and italian haunts. :)

Been to a lot of Vegas steak houses and this is one of the best.

I've had dinner at Del Toro twice and everytime the service has been GREAT... In addition to great service, they seem to always give 20% off... One night they ran out of the particular wine I was already drinking... They served a different wine and did not charge for any of the wine...
