I was wondering which restaurant at the Wynn would you recommend? One of the people I am meeting is a vegetarian but will eat seafood. Also does Wynn have security?

Lakeside or SW. Both have great menu options for vegan/vegetarian fare. Their beautifully situated on the Lake of Dreams, which also has nightly water & light shows

I agree with both Kendra and Simone.  All the Wynn property Restaurants are recommendable.
We have not stayed anywhere but the Wynn since its opening.

Mediterranean seafood at it's finest.   And yes, Wynn sometimes has security.  You may have to go downstairs to retrieve your lady.  But, they've always been very kind & not the least bit intrusive when I've visited a client there.  Enjoy your visit!

Yes Wynn has security, I would say Encore is slightly more restrictive; due to the location of the elevators.

But the whole complex probably has the best selection of good food

We only eat fish and vegetarian.   We visit this restaurant every trip to Vegas.  It is expensive.  Expect the fish alone to rune at least $120 for two - total bill with moderate wine will be $500.  If it is possible for a meal to be worth it, this one is.  The freshest fish you can imagine and perfectly prepared.
