Fair question and one you should be wondering about. After all, you dont know her and most likely may never see her again.  
There are the obvious things to research like reviews and available history. Clearly places not to go like unreviewed BP girls, though dont dismiss BP out of hand. Many reputable providers do place ads there but you should always satisfy your concerns from some independent source when you do..
The one(I think there is one currently) reputable incall Las Vegas incall agency is probably fine for example based on their many reviews and history in town.
As a precaution some guys dont bring their wallet, just an ID and necassary funds to the appointment.
I was in town two weeks ago and visited an incall provider. Due to her website, reviews and overall demeanor I felt pretty relaxed but left my wallet in the car just in case. In retrospect Im sure it wasnt necessary..she was very nice and reminded me to make sure I had my wallet before I left I but felt better being cautous anyway.

Top Rated Providers Usually Take Pride In Having A Good Reputation.

I for 1 would never go threw your pockets, while in the shower. I had a client ask for a reference on a provider I had never heard of & I did not give her a reference because she was rude & disrespectful during emails.  I told the client my personal opinion is she has a pimp.  He did not listen to me & just told me she stole $$ from his pocket, while he was in the shower.  I told him to write a review here, so other guys do not waste there time, or $.

Pick a PRO with good reviews.

In addition to what was said above, you must do your homework and protect yourself.  Make sure you read all the reviews and not only the last few. For example, the last two reviews(New Reviews-5/25 & 5/28) for a very well reviewed provider in Vegas have been 2,1 and 3,1 when the average for her 8 pages of previous reviews are over 8.5.  If the last to reviewers had read all her reviews, they would have noticed that this particular provider has done the same thing to other hobbyist twice within the last three years.  

Play safe and have fun

Just take your clothes (and all the valuables in their pockets) into the bathroom with you while you shower. You can always lock the door too.

when i provide incall, i simply get a nice room on the strip. So you would be more than welcome to use the in room safe while you shower to ease your mind. However, as a top notch provider i would never ever think of stealing..why would any girl want to ruin their rep like a certain provider recently did.

Although I've seen him lots of times, my date leaves his safe open while I am in the bath I ask him to close it! He said it's ok, I said please close it and he does.  I felt better. I respect him a lot too. So hon we feel just as uncomfy as you sometimes. Plus I try to hand you your belongings before you go in the shower.  I am not a thief here or anywhere else.  Just not in me to take something that isn't mine.
