The Venetian - My FAVE - Aquaknox  (get the seafood trio appetizer, a salad, split the surf and turf which is to die for and most importantly when you make the reservations request a booth.  They are sexy and hidden away and provide for a quiet, discreet and romantic setting.

The Wynn - My fave Daniel Boulud closed BUT the new wine bar Le Cave is fantastic for a sexy quiet get to know you setting.  Following it up with dinner at SW or Botero and you can't go wrong.

Mandalay Bay - Strip Steak or Red square if oyu are looking for a bit more relaxed yet white cloth dining experience.  As a true Texas gal I highly recommend the steaks at either locale as they are fantastic.  Beware..both tend to be a little louder with classic rock at SS and a more fusion type at RS.

The Palms - Alize is a sexy, dimly lit french restaraunt at the top of the tower and is fantastic. Have an after dinner cocktail at Nove.

Last but certainly not least...
The Bellagio - Prime Steak for a more elegant evening or even eat out on the patio if the weather is right as it is lovely.  I also like Fix for a more fun and casual experience but it has loud music too.

There are so many restaraunts and everyone has their own opinion but I given that I mostly do dinner dates I'm afraid I have tried just about everything. lol

Any hotel that offers wonderful food and a great atmosphere.I personally like Palazzo,Bellagio,Wynn,and a few restaurants that are not located in hotels.There are a few more but right now I am drawing a blank.Whatever hotel you choose have a wonderful time good food and a hot lady what more could you ask for?

Lavo ,Morels inside the Palazzo are good. If you are looking for more 5 star type resturants I would say Michael Mina inside the Bellagio is great ,they offer a wine pairing menu.Also Picaso is at the bellagio and they have great waterfront views and top notch service.

If you are looking for a more fun laid back atmosphere I would say Benihana inside the Hilton is a fun place to go ,just remember this is group seating of 8 at a table so probley not good for a first date.

The Effel Tower at Paris is top notch also with great food and great views and wonderful service.

Aria Hotel,  dine@t Barmasa -Japanese cuisine ( closed Mondays and Tuesdays)
Paris Hotel, dine @ Les Artistes Steakhouse
Mandalay ( The Hotel suites are nice!)- Many dining choices, with a popular one being Stripsteak .

Gotta agree with Sara. If you can get a seat with a view of the fountains, it's off the charts for romantic ambiance. I've eaten at nice places around the world. Vegas has developed in to arguably the one city that has the highest number of superb, top shelf restaurants.

Also try Kokomo Steak and Seafood in the Mirage they have great food and the inside is like a rainforest theme.

Sara is obviously very well educated when it comes to great places to dine in Las Vegas...

There are others... but she hit the most popular ones right on the head and you can't go wrong with her suggestions.

Most of the top restaurants in Vegas are at the hotels.  My favorite is Robuchon at MGM but it's expensive.  If you want a good run down of the restaurants and which ones have won awards, etc. this link has a good list.
