OK - MY first trip is around the corner: Where are the BEST buffets? Which have alcohol included? Any sushi buffets? What about breakfast buffet? Or are buffets a bad idea? Do people get sick from food being out? Or sick from over eating? What was your best/worst buffet experience in Vegas and would you repeat?

One of the best might be Mandalay Bay, but i do not think alcohol is available there.
It's not cheap, but top notch food including crab legs and blue berries.

I don't go to buffets anymore too often but when I did the ones I enjoyed:
Bellagio
Rio(there are 2 buffets regular one and seafood one)I have been to both.
I will say at the Rio seafood buffet I got really sick the few times I went.The regular buffet I had no issue.
Caesar's Palace buffet
Mandalay Bay buffet

Alcohol is not included unless you go and get like a champagne brunch buffet.
But,you can order alcohol when the waiter/waitress comes over to the buffet for drink orders.

I prefer first hand accounts from people in the community - not people who may have an incentive to give a buffet a good rating on google, yelp or other forums for promoting or degrading businesses. Plus, usually the casino ones come up first and those may be the bigger ones but who says they are better? Already had a PM about sushi that did NOT come up on the google search or list you supplied.

Yelp.com. Search for Las Vegas buffets, all you can eat sushi etc...and you will get a lot of info. Don't believe everyones review, but just get a sense of the restaurant and menu. Have a great time in Vegas.

All the following had wide varieties of meats, etc. but I cannot comment on those - my notes mention fish, Sashimi, and dessert choices as those are the important things to me!

Rio - Carnival World buffet -I think this was the first buffet, at least the first one worth mentioning.  Good variety -Many fish choices!.  Sushi yes - boring dessert selection -IMO,  I prefer the sugar free desserts, they only had two choices for sugar free
 
Bellagio - Great variety -Big selection of sugar free deserts YUM!  Decent choices of fish, and  Sushi and Sashimi yummy  !

Wynn -My favorite part of this buffet is their Great selection of desserts! all on little plates - they didn't have as many fish choices  = Yes on yummy Sushi and Sashimi .  

Caesars, only there once, and it was good, big selections , but, IMO  Over priced! Unless they have lowered the price, I wouldn't go back ( was like 55 )    sat in line 2 hours -  

 
For more local opinions, and tourist opinions,   like ShillBill mentioned, good info on Google, and as mentioned, Yelp too!  ( also on Yelp, the ones to avoid!)
Most the buffets have a hand sanitizer dispenser at the entrance. All the ones I mentioned are clean and well kept. I always look for the GRADE A health inspection, which is to be posted in clear view for all patrons to see ;-)

edited to mention, when in the buffet line , if you see someone in line sneezing or using their fingers to 'sample', you can ask for a new set of tongs  -  or skip that part of the buffet !  
Some buffets are using individual plates so no tongs needed, i  like this idea! Much more sanitary!

if you have a means of transportation the studio b buffet at the M resort is real nice.its about a 15 min. drive south of the airport. lots of variety and  in the types of food constantly being replaced and replenished so its always fresh with beer and wine included.my other favs are the belliago and bacchanal at ceasars. my next visit I want to try the wicked spoon at the cosmopolitan and maybe the aria buffet.

1. Wynn - reasonable selection and top quality.
2. Bellagio - Same comment as Wynn, but my first visit there a guy did an uncovered bend over sneeze and I have yet to erase the image from my memory banks.
3. Caesar's - Comment regarding price is spot on, but the selection is mammoth.  Where else can you get eggs benedict made with quail's eggs.  Then again why do you want to.
3. Wycked Spoon - Very good selection serving temperatures could be better.
Honorable Mentions:
Paris - good sausage and bread selection.
Mandalay Bay - Decent Selection good quality.
Red Rock - Off the strip, but a good alternative.

AVOID THE ARIA BUFFET AT ALL COSTS.  SERVING TEMPERATURE IS ROOM TEMPERATURE, BOTH DISAPPOINTING AND (IN MY CASE) SICKENING.  I LOST TWO DAYS OF A VACATION BECAUSE I ATE THERE.

All the above relate to breakfasts as that is the only meal I eat at a buffet.  

I also recommend the Peppermill for breakfast

Whenever I go to a buffet I take a beverage napkin with me to grab the tongs with. I'm not like overly anal about sanitation and I know there are germs in Vegas for obvious reasons.. But, I just take the napkin to make myself feel better. :)

Caesars for sure is amazing. Expensive, but you get what you pay for.  

Caesars properties has a 24 hour buffet pass. Caesars and Rio seafood have an upcharge, but.. The key is to get the pass about 30 minutes after you would usually eat dinner, then you can get two dinners out of it. Just remember, some of the buffets have long lines and it your time expires when you're in line, the your pass expires.

Oh, the joy having a diamond card for Caesars.. Sometimes skipping the line makes the whole effort worth it.

If you get a players card w/the Rio even if you don't gamble you can eat at both buffets at the Rio for 50% mon-friday.This applies to breakfast,lunch,and dinner.

usually visit fremont one night every trip and the nugget's buffet is almost always the dinner stop that night. to me it seems like over the past 2 years the quality of the food has declined somewhat but still good none the less just not up to par with the mega 5 star buffets on the strip.

Buffets are my hobby ;-) I eat at one at least once awake and sometimes daily :-D

Luxor is good (you can also buy a luxor/excalibur 24 hour buffet pass) World Carnval at Rio is good, Wicked Spoon at Cosmo is good
offstrip I like Red Rock Casino and Sunset station
all the buffets Ive had downtown suck and the absolute WORST buffet of all was Suncoast at Summerlin.. every desert was rock hard - you could hammer a nail with the donuts - even the lemon merengue had the consistancy of a sea sponge it was so hard!  

I have had many occasions when I waddle away from the table because my ribs are sore from overeating. Never been sick though.
