So you and other confused guys can understand 
First off "on line" doesn't mean a lady is available to meet or to chat over the phone.
She may be on her computer doing things like answering emails , doing screening , checking the stock market whatever .......doesn't mean she is available for work or chat.
Maybe even though she is online , she has people around her like children, family , friends who do not know what she does.
Also , when a lady says she isn't available, that doesn't mean she is busy with another client......... there are 101 reasons why she isn't available.
To name a few - Aunt Flow is visiting.
Stuck in the house waiting with a 6 hour time frame for the plumber/cable company/any type of service for home.
Has out of town company/family.
Is just tired because she had a very long night.
Is in class while multitasking online.
whatever, there are a billion reasons , I can go on and on ...........but I don't have all night.
Don't forget , We all also have "lives" outside this business.
Ok so back now to what exactly are you confused about ??
This is VEGAS . This is a 24 hour town. Some ladies may have set schedules (more likely , especially if the lady has kids,) Some ladies don't have set schedules.
But no one can be up 24/7.
Since I don't have kids , I don't have a set schedule. One day I may be out late , then the next morning I am not up by 9 -10 am.
Another day I may get to bed early and will be up early.
I prefer to know my schedule in advance, but sometimes things come up last minute regardless if they are work ( last minute booking , client extended to an overnight ) or PERSONAL related.
Now, if a guy leaves me a message lets say at 1:00 am ( and I was asleep when he called ) and his messages says- hi I am looking to book an appointment if you are available tonight.
I only hear the message lets say at 9:00 am when I wake up. Based on his message I am assuming he meant if I was available at 1:00 am ( when he called )
Since I wasn't , I don't call him back ........ unless he specifies I can call him back the next day.
So lets take based on your story- Lets say a lady was up all night on Friday. Only got to bed Sat in the AM . You call/text her on Sat at 11:00 am- are you available later today ?
by the time she wakes up and gets your message/text it is now lets say Sat 5:00 pm .......... maybe she is thinking - oh he was looking for me so many hours ago , maybe it is too late to call him back OR
maybe she just isn't available for work even though she is now online.
Did you tell her in your message to get back to you either way if yes or no ?
Did you mention what time of "later that day" you want to meet ?
Look some people are planners , some people like to play by ear . That's life.
Is your timing inconvenient ? Are they flakes ? who knows ? only they know .
Just because a lady saw you once or twice with same day request , doesn't mean she can always see you on a same day request.
Best to just ask them straight up how do they prefer you book them. ............ and if you still don't get an answer, then maybe there is a reason they are not responding to your request
and it's time to move on. ............ Just saying sometimes people do or say things "just to be polite" but they don't mean it ( that goes for both ends - men and women )
