I'm looking for a place to sit in the corner, people watch, shoot some pool and talk to the locals...spent too much money at SW, Nobu, yellowtail and Maestro's...doing this at the higher end places...looking for a place to waste away an afternoon....

ELLIS ISLAND is great for Karaoke in the evening.  
Lots of fun to people watch there too.

Dinos on LV Blvd is away from the hotels & casinos with a wide variety of locals & a few tourists. Might even get a few tips on the girls that are working across the street at the OG strip club if you get bored.

Lots of laughing about the Ass Juice! Been there.... done that several times.

However... the OP does not even drink. Cosmo or my place to see the hotties coming in and out

Other then that.. the local Dive Bars in LV are a complete waste of time.

Ellis Island - a Favorite with Locals - close enough to the strip to get tourists too - Busy on Monday.
Sometimes A bit too smokey, but the crowd Rocks Some good singers.

Then head over to the chandelier bar at the cosmo and grab onto a club soda and watch the escorts stroll by

Not in the afternoon, but at the Red Label on Sahara just W of the strip, they have Porn Star Karaoke on Monday nights. First Monday of each month is Pajama Party Porn Star Karaoke... There is some people watching for ya... ha  ha
