Americanized sushi sucks and you'll find a wide range of prices.  Most of it overpriced because of the popularity at the moment. So many places around anymore. If you want to go by urbanspoon  recommends     Sushi Samba has a 4 star price and a 84% recommend.  Goyemon has 2 star price and 86% recommend.  Having lived in Tokyo for 3 years, I would vote for Goyemon, but.....just like the ladies here....many prices and many different likes. Depends on your preference. Hope you have a good time wherever you decide to go.

My favorite is Sushi Samba was just there this week and food and service was great and I tried some new sushi:)
Sushi Samba located in the Palazzo Hotel 2nd floor right next to Table 10 Emeril's restaurant
I have ate at Sushi Samba many times the staff is really helpful they always make such great suggestions off of their menu.It is not traditional japanese sushi it is like peruvian/brazilian/japanese.
Very good and if you go to Sushi Samba order their Lobster Tempura it is not on the menu but oh it is so good.

Nobu located Hardrock Hotel or Caesar's Palace food was okay.
I also like the Sushi restaurant in the Aria Hotel BarMasa very good sushi.
Also if you want to have Sushi off the strip but close to the strip you can try Kabuki located in Town Square on S. Las Vegas Blvd.

If your ever in the mood for some quick fresh sushi I went to smith's the other day and tried there sushi it was so yummy I really liked it and I'm very picky! ! ! !  Just thought I would pass on the the recommendation for all of you local sushi lovers that don't have time to go to a restaurant and want some thing quick  ;)

off the strip and it would be Soho Japanese Rest. The seafood (fish and shellfish) is very fresh and the owner/sushi chef is there day and night. I have been to several sushi places on the strip and the quality, price and service is hard to beat. The staff is also very helpful with any questions you may have. Try the green tea tiramisu, but go early as it sells out really fast.
