Just wondering if anyone would recommend some must-try restaurants. My favorite cuisines include Japanese, high-end Mexican (love taquerias too, just not what I'm looking for at the moment), and seafood restaurants.

Try Aburiya Raku. It's not on the strip, but it's only a short cab ride away.
RM Seafood at Mandalay Bay for seafood. There are other great choices in Vegas (ex Seablue in MGM, Bartolotta at the Wynn), but RM sticks out for me.

The one time your in Vegas, and I'm out of town. (pout!)

That sounds like a great suggestion. I have tried Seablue for happy hour and enjoyed it immensely. I'll let you know what I think of RM.
