In Vegas M-W. Staying at Paris. Can’t host in room. How can I see someone without raising flags with soneone with me?

You might just rent a separate room for your meeting. Bally's might work well.  It is right next door to the Paris and there is a tunnel/walkway that connects the two places.

Look for a reputable provider who can host on or near the strip.
