There's two schools of thought, whether you'll use your room as an incall or not.

Vegas tends to be a tourist market so most calls tend to be outcall, generally to a strip hotel, downtown, or one of the other nice properties in the area (Summerlin, Green Valley, Lake Las Vegas, and you might be able to throw the south of the general strip area someday).  If you go the traditional route and do outcall only like most other providers, then your choice of hotel should be whatever one seems to make you feel comfortable.  Lots of high class properties with good/great amenities, others that are closer to a functional room.  Being on or near the strip is usually key since most guys will be staying there.  Plenty of taxis and limos to drive you around the strip.  If you have friends that live in Vegas, getting a rental car (with GPS although it won't help in some newer sections of town) while crashing at their place isn't a bad idea (although bad idea is getting a DUI, esp when you don't live here; but we have taxi/limo/driver services available).

If you want to use your room as an incall, then it come down to if you want the hassle and sense of security of having a guard posted at the guest elevators or not.  Tasha (vegassugar20) has an older thread here that listed a lot of the properties around town and whether they had security at the guest elevators or not.

A few more tidbits:
The AEE (Jan 9-12) is being held at the Sands so the Venetian and Palazzo will probably be overpriced.  The AVN Award show (Jan 12) is at Mandalay Bay Event Center so Mandalay Bay, theHOTEL, and Four Seasons will probably be overpriced.

Las Vegas Advisor is a site run by a guy named Anthony Curtis who writes about gambling and/or Vegas.  He tends to cite Travelaxe for room rates so that might be a decent site to start looking at room rates.
