Several of the ones I know that have retired will keep their phone on for about six months to determine if they are going to make it or not, whether their retirement is a civvie job, or a sugar daddy. They will ghost the peripheral players, but they will keep talking to their regulars, because if the retirement doesn't work out, their regulars are the ones that will sustain them re-entering the biz, so you are correct that, as long as their working phone is live, they will probably be back someday. If the retirement DOES work out, then, as you say, the phone gets disconnected. Even then, if they have former customers they were particularly close to, and want to continue being friends, they will give them the NEW number and text periodically for someone to drink with. Lol
If a retiring girl returns to Korea and leaves you her +82 phone number, she probably regards you as a life-long friend. I've got two of these that retired over 5 and 7 years ago, respectively, but we still exchange text messages once or twice a month, and if they come to the US on vacation, they will make it a point to stay with me for a few days, and I will take them to some very nice places.
