Hello Ladies and Gentlemen of Dallas,

   I have a gentleman friend, who has reserved a dinner date with me, and asked that I choose the restaurant.  I have been to more Capital Grilles, and Mortons (no offense, gentlemen), etc., than I care to count.  Looking in the area of Uptown/Dallas.  Not a fan of asian, or sushi.

   Your suggestions would be greatly appreciated, as Opentable and Zagat, left my head spinning.

Of course much of where you choose would depend on what type of environment the client expects and/or desires, feels comfortable in.  I always try to create an experience to not only please me but also my partner .   The question you pose is very general. The type of place you are looking for would be helpful in giving you suggestions.  You know.. what you are trying to get away from? wanting more imaginative fare, hipper environment then the Capitol Grill (?) and what is your client imagining as his ideal.  

since many of the men paying for dinner dates expect that white tablecloth dining experience here are a few suggestions.
I like the French Room at the Anatole *most often when the fellow is TOTALLY expecting the highest quality personalized service* ,  560 sometimes for the Kitsch of the revolving ball,  you might do a search for Watel's  too.  

Lately my top pick for the candle light one on one has been SER.  I've been  a couple of times this year.  The other patrons were attractive and dressed the room.  It is still a Steak house but great view of the city from Anatole's 27th floor and some innovative 'different' thing like the heirloom tomatoes that fizz in your mouth, foie gras shooters.  this last time I veered away from  my usual filet and got some sea scallops... they were meaty and delicious.  Plus the acoustics were right for conversation and there was a piano playing in the background.  Just a really nice vibe. romantic and without the din and bustle *and hurried impersonal service* of places like Nick and Sam's (which I detest)    

But if the man is hoping to show you off - if that is part of the experience for him, then SER is not a recommendation as it is not really a 'see and be seen' venue.    In that case, maybe FEARINGS at the Ritz.

...to recommend a few options.

   You were correct to assume, that we are looking for the low key (I dress quite conservative; even when wearing a cocktail dress), white table cloth environment.  My friend and I, are very much into wine, and both restaurants, appear to have a great wine list.  

   I think you had me at "fois gras shooters"; oh my!  What an atypical variation.
