Imagine how I felt, a mostly newbie dancer, walking into a supposedly topless bar to audition, and everyone was nude. It was ... mildly shocking. Ah, youth.
As others have said, they're both in the giant pink building off Composite. The Fare is to the right, further from Composite, Cabaret is to the left, closer to the street. Cabaret is topless, Fare is nude -- so you can buy alcohol in Cabaret but Fare is BYOB. Both are good clubs, but since I don't know your definition of a "good dance", I can't help ya there. Cabaret *was* lower on the extras when I was there, and was rumored to have prettier women (hey, they had me, right?? haha), but both may have changed over the years. It's been a while since I was at either. 
They used to have some deal where if you bought VIP for one club you could get into the other for free, so be sure to ask if they still have anything like that available.
