If you want fun ingredients, Nomi.  For sure.  I'm pretty sure in one meal I've had wild boar (stew), foie gras, rabbit croquet.  It's fun.

The best wine pairing I've ever had in my life was Topolobampo.  Surprising.  It was so perfect that when I would get ahead or behind myself, the alcohol was disgusting.  Really.  But on schedule it was the most...round feeling in my mouth.  

And Pops for Champagne is fun (if someone else is paying, of course. )
