Some agencies advertise that they never keep records and also advertise that they accept credit cards. They are either lying and keeping records they say they wouldn't, or they are in violation of merchant policy because they must keep records for at least 3 years on all credit card transactions. Or maybe there's a third policy: They simply don't care: applying surcharges to credit card transactions is also agains merchant policy and most agencies do it...
Also, even if a session is paid for in cash it's a dangerous policy not to keep any records of it. The IRS will love to estimate the transactions that are not on the books... However, the agency doesn't need to keep your personal information for those ones.
So if you are really concerned about privacy then you better to pay in cash.
Oh, and if an independent accepts credit cards then the process is just the same as an agency should do: records must be kept.
I have had bad luck with agencies and tend to stay with the independent. Many agencies teed to be "cattle shutes" and the girls may be expected to see as many as 12 clients in a day. Most independents see 1 or 2 / day ... some may see up to 5. Since they are "in business for themselves" the independents I have seen have always provided a superior experience than agencies ... at least that has been my experience.

First ask how the transaction is going to show up on you credit card. Don't be affraid to ask. If you feel uncomfortable find another way to make payment.
I used to work for a company that the transaction showed up as a DJ cmpany. Much easier to explain. Just make sure you are not always charging appointments to your CC. In the end it will raise eyebrow of whom ever you do not want to know that you are hobbying.
Paypal is ok too. as long as you do not share a CC with you wife or someone else. Why? If it is their account too. They caninquire about the purchase made. Just becareful either way.
