Personally I never see more than one client a day, in fact I often don't see more than 3 a week. Some girls are higher volume, especially visiting providers who have to be higher volume to cover their traveling expenses and still make a worthwhile profit. But then they'll usually take a week or two off at a time. Providers offering incalls from hotels also tend to be higher volume, again to cover their higher operating expenses and still make a worthwhile profit (which is why I don't offer incalls). But there are also providers with regular full time jobs who only see one client a week. I think the majority fall somewhere in between though, the girls I work with for example see 3 to 9 per week.

As for BBBJ vs BBFS, their is still some risk with BBBJ but it is much lower. There have already been discussions on that subject, I suggest you search for them if you're curious.
