I thought the exact same thing when I saw the OP!!!! Agree with everything you wrote.  But the chicken parm is the star of the show.  Madonn'!!!!!! Used to work in Medford and had many a food coma after going there for lunch.  Fuggetaboutit!!!

So do I just walk in and ask, "small roast beef, no bun, no nothing, just the beef and wrapper, I'll eat it paleo style in the car while you all shake your heads". I so miss just walking in and ordering a yummy roast beef sandwich!

Of course there are some fine "subs" in the area as well and in your excitement you may have to remind yourself not to go after them all paleo style!

I am sure a few of us know what subs are, and I'm thinking that you need an OTK spanking of your own!
There are those of us who are rather adept at the hobby, but may have thought with our tummies first, especially on the subject of Roast Beef! Now be a good boy and play nice won't you?

To answer your question, often no fork at all because, well I'm driving and it's easier to just pick at it and use napkins and hand wipes after. Plus, I'm all over a good piece of meat
