She mentioned the VPNs for sites like this but her concern was primarily with changing her policy such that moving forward she would only be using a secure encrypted email (and only responding to those who also used them) from email providers like protonmail etc.

You don't have to buy a VPN contract, if you just install the Opera browser and turn on its built-in VPN. You can even tell it which region of the world you want to be the exit point, for example Europe. And it's all FREE.
I've been posting about it on Twitter and Switter. I think a lot of people don't know what VPNs are and don't want to take the time to learn. I posted YouTube links on understanding the VPN and also "best VPNs" to use.
