As was told to me, the peas were for good luck, and the greens were for wealth (greenbacks, folding money?).  You make your own kharma.  I just know that when I cook up a mess of the stuff, the house fills up with friends... and that works for me.

Even though I'm a native Atlantan, and do not spend a New Years Day without black-eyed peas and, yes, Hog Jowls, I just do not crave Collards and have taken to Corned beef and Cabbage instead.  Is this sacrilege, and if so, is there a God of Cole crops that I can offer a sacrifice to for my transgression?
