I agree with you whole heartedly. As long as I have been seeing escorts, one might think I would get a bit jaded.  However, there was a post about which agency is best in Atlanta and we have had the same question asked about independents.

I say that those questions are impossible to answer. Each lady has her own gifts she brings to the table. For some it is incredible beauty, others it is an amazing and welcoming personality and yet others it is their sensuality or just plain sexuality. Then there are the rare ones who bring all of those to the table.

The same is true for agencies. Some are well managed and great to work with and for. Others have incredible women; others have great women and a more affordable gifting policy. Some agencys have well appointed private incalls where you never see another guy and some don't.
As soon as I think I have a new favorite, there is a new lady or agency that appears that offers something or someone who tempts my wandering eye.

So for me, my favorite is the lady who is making me feel like a king at any given moment. I could nam a dozen off the top of my head who I haven't seen yet and tomorrow there will be 1 or 2 more added to that list.

As for paying, I have never minded paying an escort unless her service was poor or the situation was just horrible. In 25+ years that may have happened 5 times at most.
