I have a well reviewed provider that offers a good deal on a pool date already picked out. We've sent a few emails already. I could be tempted by another provider if they could offer a better deal...

A couple of things you should do.
1) search for the type of provider that you are looking or from the ones that mention or advertise that they do pool dates.
2) get yourself VIP to check there reviews. The well respected ones you see on here ate all about you having the time of your life.
3) tell them when you are corresponding with them either by email or phone what you want to do during your pool date ie.
Sun, lunch, drink, swim, room time etc. they are more than happy to make sure you have a great time as long as you treat them right.
Vegas has so many great providers that really know how to have a great time.
