There have been a bunch of openings of really great new restaurants that have done away with the typical reservation system in favor of making everyone wait or only taking walk-ins a la Rose's Luxury. Quite a few of those are on my to-do list, but I never suggest them, because logistically it makes things a little weird.
If the actual dinnertime portion of a dinner date were clock-free, would that type of restaurant be of interest knowing that you may have to wait an hour for a table and there's no definite timeline? Or do you prefer the type of dinner date where you know by 8:30PM the do not disturb sign will definitely be on the door? Just curious if it's something I should consider making an adjustment/new package to accomodate for... xIf the menu looks good why not. I think a foodie would find this quiet interesting. Nice opportunity for some convo over a nice meal, but its ultimately your time so its completely up to you.

but I will say that it I would offer this to people who are at least mindful about the time that way no one is taking advantage of you time. It's a good idea though. Good Luck
Let's say its a three hour date. Its a Friday night, so could easily go five plus hours. Do you charge for three, even though it goes longer (the dinner portion)?
What if you get seated right away, and you're served quickly and are out the door ASAP and done in 2 1/2 hours, do you still charge for three hours? My mechanic says you get charged what by the job, not the hours. Funny how he gets things fixed faster than stated 'by the book'.For me personally? At the moment, it's a 3-4 hour, everything included.
As for this idea, I would make the dinner portion with no particular time limit because the average dinner is anywhere from 90 mins-3hrs (when the good bottles of wine start to flow...) and at these restaurants you have to add in at least an additional hour for wait time in my experience. And then a set 1 hour or 2 hour option for "dessert" behind closed doors. So I don't think I quite get your question but either way it's a fixed rate.A little bit of uncertainty could make the evening more intriguing. You could test this out with a a couple of gentleman you know well. Sounds like a win-win. Gentleman gets More time with you, and you both get to check out new places.

who offer "clock-free" evenings just for this purpose. The "standard" 4 hr dinner date just doesn't cut it with traffic worries, seating wait times, etc.. all pushing against the limits of the clock.
LOL, a few ladies I've met did not have a "clock-free" or "extended date night" package, and we still managed to come up with a donation that worked for everyone. PM me and I'll share some names. Maybe ask the providers directly how they feel about their "clock-free", "Dinner evening" or "Extended dinner date" packages.And I thought your "clock-free" meant off-the-clock.
I ain't spending a thousand bucks in addition to paying for dinner.

Demonstrates that you are about new experiences and are not a rigid clock person, which is refreshing (not that I blame others for conducting their business the way they do). But if I were you, I'd broach this more informally with regulars who you know could hold down their side of a conversation - as I imagine the evening could really feel like it was dragging if conversation was weak and you had an extra hour or so added to the front end while waiting for a table. Then again, perhaps I'm just projecting, maybe you like the experience of meeting all types and can enjoy/help foster interesting conversation with most that you meet (as I think about it, I suspect that this is at least somewhat true - you are a "natural" after all, and I can attest that it is a true pleasure to spend time with you in any capacity).
I've enjoyed the casual time spent with a few ladies that fell outside the usual hourly structure, so I'm sure you will have plenty who will like this idea and take you up on it. Hope all is well my friend! ☺️J
