I was perusing my local Ad Board today and came across a new touring provider who claims to be "very open-minded". Intrigued, I looked at her reviews and there was no Greek and no CIM. These are the 2 things I personally usually associate with providers who are "open-minded". I've also seen SBs say they are on their profiles that they are very "open-minded", although I usually associate this with them going BCD for $$.

With SB's... who the fuck knows... it could be about money, it could be about sex, it could be about your choice of bedtime story or whether you want to buy them the Pradas or the Louboutins.
Can't comment on hookers as that never gelled well with me! However with SBs, the phrase most often could mean that they will consider companionship with someone much older as a trade off for whatever it is that they are offering. Some are even "open minded" to the extent that they do not mind or even may like being seen in public with someone (much) older.

Most SB I don't think have had that much experience with either. Oral but not CIM.
I did Greek with 4 of my last 10 SB's and CIM with 9 of them. Also, 3 of them were into enthusiastically tossing my salad. None of them were escorts.
In fact, my experience is that a lot of SB's are more "open-minded" (read: kinky) than most providers. (See the post below this.)
As an SB- I have never used that phrase even when I was younger. So probably just some half assed flowery word they are using to try to take you for all you got.

Open minded is one of those basically meaningless terms that means a thousand different things to a thousand different people.
