Why would anyone be surprised?  To me, 1 in 20 is about what I'd assume, and it's probably the same here.  But more than that, I find studies like this flawed at base because I doubt many people answer them honestly.
Now perhaps if Tobi did a survey, I'd believe it.

According to a study by the UK National Union of Students, 59% of students work while in university.  So the original article's summary that "1 in 20" students is a sex worker is instead "1 in 12 of those who work, are in sex work".  This means 8% of working UK students are considered sex workers.

Would love to compare that 8% against the other jobs held by students in the UK, a figure I can't find.  But I'd be surprised if it's not equivalent to the percent working in retail, manufacturing, tourism and the like.  My contention is sex work is a mainstream industry.

As a veteran of many trips to London, I am not at all surprised to hear that 5% of UK females worked in the sex trade.  Frankly, since the 5% number includes both males and females, I am amazed that the percentage for men is higher than women -- I would have guesses the number was more like 9% of all women and 1% of all men.  Perhaps since it's legal there, it does not have nearly the social 'stigma' that it has in the US.  And with school being SO expensive, one meets a LOT of lovely and intelligent coeds.  Part of this also might be because in London there are many terrific reputable and long-established agencies known for treating the escorts they represent very fairly... and this allows a student to escort part-time rather seamlessly without the need to go independent, though there are many terrific indys also.
