When scientists collect data in studies they're well aware that their own bias can throw the results. Even if they're not consciously aware of their bias, it can still effect the outcome. For this reason, double blind studies are conducted to get more accurate results. Why can't we conduct our elections the same way?

The people counting the votes should not know which candidate they're counting. They should only know that they're counting Candidate "X" and Candidate "Y". The people who know that Candidate "X" is which particular candidate should have nothing to do with the vote count and not even see the vote count until everything is counted.  

This way, someone can try to interfere in the vote totals, but they would have no way of knowing which candidate they're interfering with.
