Good Morning,  

Several years ago I had a lovely dinner date. The restaurant was in a mountain.  I cannot recall the name of either. It wasn't too far from Scottsdale.  It was part of a hotel/spa.  
Apparently I'm putting the wrong terms into Google.  Nothing is popping up for me.  
I'd love to return on my upcoming trip.  Any help would be greatly appreciated.

Not familiar with a restaurant in a mountain. There are at least three resorts with restaurants close to Camelback.

Sounds like "Top of the Rock" restaurant at the Buttes hotel in Tempe........Enjoy!

Bunch of good possibilities were posted. Top of the Rock is probably the most likely candidate.  

There’s also a slim chance it might have been The Rustler’s Rooste at the Arizona Grand.

I believe I know the place you’re seeking unfortunately don’t know the name of it. However, I believe it’s out off Shea Blvd maybe either in Fountain Hills or just before entering, try a search in Fountain Hills.  If we’re talking about the same place, agreed, great food and fantastic setting, good luck!
