At M Resort in Henderson,  just off I-15.  Outstanding cuisine in a beautiful setting.  It's called Anthony's, and they're only open for dinner nightly.
And, I even have a recommendation for company there, make it a dinner-date!

Try Montana meat company it's around blue diamond and Durango.  Great food at reasonable prices!

Golden Steer on Sahara, an old Detroit mob joint, has been around a million years and is still stellar.  

None of these are south of LAS either, but my favorite places for steak on casino comp dollars are in order:

1) MRKT (Aliante) - yeah, it's like in Utah, but Trust Number 6 on this one.  

2) Nove (Palms) - Yeah, I know, N9ne is the steakhouse, but Nove offers killer cuts and carpaccios.  

3) THE Steakhouse (CC)- Still solid and an fairly easy comp/

I agree w/the poster on this place, I ate there during avns 2 weeks ago. If you get a players card there, its a special offer for like $9 for a steak & 20oz beer & the steak was awesome (I didnt get the beer but for a soda, its like about 2 dollars for that instead of the beer).
