"Be sure to include your age, profession, & ethnicity in any text for screening"

What's the deal with "Profession" ?
How would that affect things?

There is such a wide range of possible answers that I have trouble seeing the relevance, specially since some would prefer to make something up.

Is it a precursor to the next screening step of "actual place of work" or do the Ladies prefer not to see Clients in some professions?

Yes, and I've met a number of ladies who will not work anywhere near where they live for this reason also.
